Ingredients

  • 2 Big Glugs Olive Oil
  • 1/2 C Onion, Chopped (1 smallish onion)
  • 1 TBS Garlic, chopped (about 2 cloves)
  • 1 tsp Dried thyme
  • 1 BIG TBS Tomato Paste
  • 1 Cup Passata (Pureed or Strained Tomatoes)
  • 1/2 C Vegetable Stock or Water
  • 2-3 Ritz Crackers
  • 1 TBS Cream Cheese

Instructions

  1. Sautee onion and garlic until golden brown.
  2. Stir in thyme and tomato paste and cook to caramelize
  3. Add passata, stock and crackers and simmer 10 minutes
  4. Puree until smooth with blender or hand blender.
  5. Stir in cream cheese and season to taste with salt and pepper.

Notes

Freezes well. Defrost in the fridge overnight. If it isn't smooth after defrosting, stir in 2 TBS water and buzz again with hand blender to bring it all back together.
