Ingredients
- 2 Big Glugs Olive Oil
- 1/2 C Onion, Chopped (1 smallish onion)
- 1 TBS Garlic, chopped (about 2 cloves)
- 1 tsp Dried thyme
- 1 BIG TBS Tomato Paste
- 1 Cup Passata (Pureed or Strained Tomatoes)
- 1/2 C Vegetable Stock or Water
- 2-3 Ritz Crackers
- 1 TBS Cream Cheese
Instructions
- Sautee onion and garlic until golden brown.
- Stir in thyme and tomato paste and cook to caramelize
- Add passata, stock and crackers and simmer 10 minutes
- Puree until smooth with blender or hand blender.
- Stir in cream cheese and season to taste with salt and pepper.
Notes
Freezes well. Defrost in the fridge overnight. If it isn't smooth after defrosting, stir in 2 TBS water and buzz again with hand blender to bring it all back together.
