Poached Shrimp

Ingredients

  • 1/2# 16/20 shrimp ("easy peel" preferred), thawed if necessary, cleaned of intestinal vein if necessary.
  • 1/4 cup Red or Yellow onion, chopped
  • 1 stalk Celery, chopped
  • 2 tsp Granulated Garlic
  • 1 tsp Granulated Onion
  • 2 tsp Kosher Salt
  • Pinch Red Pepper Flakes
  • 1/8 tsp Ground Allspice
  • 2 pc Cloves
  • 2 pc Dried Bay Leaves
  • 1 TBS White Wine Vinegar

Instructions

    Bring all ingredients except shrimp to a boil.

    Add salt to taste but remember the shrimp themselves can be a bit salty so don't overdo it.

    Prepare a bowl large enough to hold the shrimp, ice and some liquid 2/3 full with ice cubes.

    Add shrimp to poaching liquid and cook until tails start to curl, approximately 5 minutes. If you don't know when it is ready, cut a piece off to test doneness. The shrimp should be opaque and the flesh should feel firm.

    Transfer shrimp to bowl with ice and pour over enough poaching liquid to just cover. Cool completely then drain and peel if necessary.
